PULICHA KEERAI THUVAIYAL | GONGURA CHUTNEY | SORREL LEAVES CHUTNEY

 


Pulicha Keerai Thuvaiyal/Gongura chutney is a well known Andhra dish. Gongura leaves are acrid in taste and high in vitamins, minerals and against oxidants. This is my mother's formula.. Gongura chutney tastes extraordinary with white rice, inactively and dosa. The tangyness of pulichakeerai thogaiyal praises well with curd rice. 


Ingredients 


  • 2.5 Cups of Gongura Leaves/Pulicha Keerai/Sorrel Leaves (Tightly Packed) 
  • Salt to Taste 

To Saute 

  • 1 Tbsp of Coriander Seeds 

  • 1 Tsp of Whole Cumin 

  • 7 Red Chillies, Big 

  • 1/2 Tsp of Fenugreek 

  • 6 Garlic Cloves, Big 

To Temper 

  • 1-2 Tbsp of Gingelly Oil/Nallennai 

  • 1/2 Tsp of Mustard Seeds 

  • 1/2 Tsp of Urad Dal 

  • Spot of Hing 


Technique 




  • Eliminate the gongura leaves from the stem, wash it in regular water and keep this to the side. 

  • Warmth oil in a dish and meal every one of the ingredients recorded under " To Saute" list, fry for 2-3 mins in a medium fire till shading changes and smell comes. Mood killer the fire. Allow it to cool for 5 mins. 

  • In a similar dish, add gongura leaves, saute this for few mins until leaves psychologists and shading changes. Mood killer the fire. Allow them to chill off for 5 mins. 

  • In a blender, add the simmered flavors, pound it to a coarse powder. To the blender, presently add sauted gongura leaves and salt, pound it to a smooth glue. 

  • Warmth oil in a skillet, when it is hot, add mustard seeds, urad dal and hing, when it splutters, add the ground glue, saute well for 2 mins and mood killer the fire. 

  • Gongura chutney/pulichakeerai thugayal is fit to be presented with hot white rice. Likewise it is amazing blend with curd rice. 


Tips 


  • It remains great in fridge for seven days. 

  • Change the measure of red chillies as indicated by your taste. 

  • You can utilize green chillies rather than red chillies. 

  • Adding gingelly oil expands the taste. 

  • Try not to add water while crushing.
